Question about switch to coir/sand substrate

Hi -- noob here.  Been monitoring site for a couple of months.  First posting.  Maui, our Russian has been with us for several months.  We've been using repti-bark as the substrate in his 40 gallon Rubbermaid container without any apparent problems, but after reading up on what is considered the best substrate, yesterday we switched to a coir (Eco-Earth and play sand mixture).  Maui seems happy; he was very active yesterday after the switch.  Here's my question:  he is now covered with substrate and there is a lot at the bottom of his water bowl, which he dragged in with him.  Is this is a problem?  Are there any concerns we should have about it getting in his food, eyes, etc?  Does this mean that perhaps the substrate is too moist?  Any advice would be appreciated.

Thanks Joe.  One other quick followup question -- the area under the basking lamp (100 watt UVB bulb) is now registering much cooler (high 80s to low 90s) than it was with the Repti-Bark (high 90s).  I assume that this is because the coir/sand substrate is moist while the bark was dry.  Any issues there?  Or is the area a few inches above the surface where Maui and his shell will get the heat/light presumably the right temp . . .

Those temps are fine. I like to measure the shell temps with a temp gun.
